Mama's Red
Snapper
Ingredients
1-2 pounds Red Snapper fillets
olive oil
1-2 cloves garlic, minced
1 onion, chopped
1 red and 1 green bell pepper, chopped
4 plum tomatoes, quartered
mushrooms, halved
salt, pepper, basil, parsley, oregano to taste
1. Brush fillets with olive oil and sprinkle with salt and pepper. Broil or bake
separately
2. In a large skillet, heat olive oil, saute onion and garlic until onion is clear, add
peppers and cook a few minutes. Add tomatoes, seasonings and mushrooms and
cook 2 or 3 minutes longer.
3. Place vegetables on fish to serve.
